Whisk again before serving. Vinegar is a good choice if you are going to use this vinaigrette as an accompaniment with your salad as it does not have much flavor of its own so that you can see the taste of fresh oregano herb in your salad. If you are using oregano oil for making the vinaigrette, make sure that it is pure oregano essential oil and not just oregano-flavored cooking oil or olive oil. Some of these oils can be adulterated with cheap substitutes.

Ingredients 6 potatoes, one tablespoon of oregano leaves (remove the stem), two tablespoons fresh parsley 1-1/2 cup black olives, sliced three cloves garlic, crushed 1/4 cup onion chopped two tablespoons olive oil salt to taste Method Boil potatoes until tender but not overcooked. Drain water and transfer to a bowl.

While still warm, add the oregano leaves, parsley, olives, garlic, onion, and salt. Toss well to mix evenly. Drizzle olive oil over it before serving. This potato salad can be made in advance and refrigerated until use.

Ingredients 2 cups cooked chicken breast cut into cubes 1/4 cup pecans chopped three tablespoons red onion finely chopped 1-2 tablespoon oregano leaves (remove the stem) 1/4 teaspoon garlic powder 1/4 cup mayonnaise one tablespoon lemon juice salt to taste Method Mix all ingredients together.
